POTATO SABJI
Ingredients:
Potatoes - 3 medium, boiled and peeled
Oil - 2 tbsp
Cumin seeds - 1/2 tsp
Mustard seeds- 1/2 tsp
Green chilli - 1, chopped
Onion- 1 small, finely chopped
Turmeric powder - 1/4 tsp
Red chilli powder - 1/2 tsp(adjust to taste)
Coriander powder- 1/2 tsp
Garam masala 1/4 tsp (optional)
Salt - to taste
Fresh coriander leaves- for garnish
Lemon juice- 1/2 tsp(optional)
Procedure
Step 1: Prep the potatoes
Cut the boiled potatoes into small cubes
Step 2: Make the tempering
Heat oil in a pan.
Add mustard seeds(optional) and let them splutter
Add cumin seeds, let them crackle
Add green chilli and onion, saute until onions anr soft.
Step 3: Add spices
Add turmeric powder, red chilli powder, coriander powder,and salt. Saute for a few seconds(don't burn the spices)
Step 4: Add potatoes
Mix in the potato cubes. Stir gently so they are thoroughly coatedwith the masala.
cook on low flame for 4-5 minutes,stirring occaisonally untilcrispy on the edges.
Step 5: Finish
Sprinkle garam masala and mix.
Garnish withfresh coriander leaves and a dash of lemon juice if desired.
Serving ideas:
Great with roti, paratha or even puri.
You can also use this as a stuffing for masala dosa or sandwiches.
